I cannot get enough of sole, local asparagus and pan-fried potatoes. I wish my digital camera wasn’t on the fritz so you could visualize this absolutely lovely delicious dinner.

Garlic Butter Sole

Sole fillets

Couple cloves of garlic, chopped up

Couple tablespoons of olive oil

Couple tablespoons of butter

Put all ingredients into a pan over medium heat on stove top. Heat until sole is white and flaky. I eat this with asparagus that I have tossed with olive oil, salt and pepper and fresh grated Parmesan. Squeeze some fresh lemon juice on top, and voila! Dinner is tasty. I like to eat this with fried potatoes with ranch dressing too. Yum.
